My Pinteresting Week

I decided that October is the month for change.
On Oct 1st I started a new job so I have been trying to find easy to prepare and yummy recipes to make for dinner. Do I crack open my dozens of cookbooks...nope, I head over to Pinterest!
I have been pinning stuff for over a year and most of what I have made has turned out pretty good.
I decided that for the month first week of October, everything I cook will come from Pinterest!

I didn't make it to the grocery store in time to cook anything in the first week of the month, so I stocked up and started my adventure on Mon 10/8.

Monday 10/8- Crock Pot Beef Stew
I like this recipe because of its simplicity. To make life even easier I use crock pot liners and pre-bag the ingredients the night before.
I combine the flour, spices, and meat in one ziplock bag. Then put the veggies and "wet" ingredients in another. Both bags go into the fridge until morning.
I line the crock-pot to make cleaning up a breeze then dump the meat bag in followed by the veggie and set it on low for 10hrs. 
I usually tweak the recipe to fit our taste- more potatoes for my hubby and only quarter to half an onion for me. Sometimes I'll add some beef seasoning or other flavors, but it's not needed. The recipe is good as written.
Pick up some fresh rolls, a crusty baguette, or some french bread on the way home and dinner is served!

Tuesday 10/9- Since the Orioles won I used the Papa Johns coupon to get a nice 6 Cheese pizza with mushrooms for half price!
Hey-- I said I'd use Pinterest for everything I cook...not for every meal lol.

Wednesday 10/10- Tacos
Wed I made basic tacos for the simple fact that I wanted the leftovers for Prison Tacos to take to work for lunch.


Thursday 10/11/12 (cool!)- Panko Pork  with  Parmesan Asparagus
I bought some nice thin pork chops and had some left over asparagus so this was an easy pairing.
The pork came out juicy and delicious (I used Italian style bread crumbs, Parmesan cheese, and panko for the coating). The asparagus could have been cooked longer as is was too crunchy for me.

Friday 10/12/12- Eat at Joes style pot :)
I'm super excited about this meal...details to follow!
